1 1/2 cups flour
1/2 can of beer
2 Tbls olive oil
1 tsp sugar
pinch of salt
Mix above ingredients and add the salt last place in bowl and set aside. Add more flour or more beer to get a rounded sticky dough ball.
Heat in saucepan on medium high heat
1 Tbls olive oil and 1 Tbls butter
add 2 Tbls flour and stir until bubbly and flour is combined.
add the spaghetti sauce and continue to cook until thick an bubbly. If you have onions and garlic chop them up and add it.
Add 1 teaspoon Italian seasoning
Spread the dough on a flat pan and place in oven 400 degrees for 7 minutes.
Pull from oven and let cool for 5 minutes then add sauce and pepperoni, and grated cheese.
Put in oven and cook for 10 minutes until cheese is melted and dough is brown on edges.
my favorite recipe for mini pizzas is if you buy those english muffins. cut them in half, add some prego or ragu, cheese, pepperoni, and but them in the microwave. if you want them to be a little better, put them in the oven for a few minutes, or put them in the toaster oven if you have one.

1 Pkg Small Snack Size Pita Bread
Pizza Sauce
Toppings, as desired. I have used:
Shredded Cheese, mixed or any kind desired.
Cooked Ground Beef Mixture with Onions & Peppers,
Cooked Mushrooms, Pepperoni, chopped or whole slices.
I have used any or all of these.
Cut Pita Breads in half making two rounds.
Layer with the following:
Pizza Sauce
Cheeses
Vegetables & Meats
Bake in preheated 375 degree oven for 15 minutes or until desired doneness. Serve warm.

1 Eggplant, 3″ diameter, peeled and cut into 4 slices 1/2″ thick
4 tsp Olive oil
1/2 tsp Salt
1/8 tsp Black pepper
1 Lg ripe tomato, cut into 4 slices
1/2 tsp Dried oregano
1/4 tsp Dried basil
1/2 tsp Garlic powder
1/2 cup Shredded mozzarella
Preparation
preheat the oven or toaster to 425
Brush both sides of the eggplant with the pol and season with the salt and pepper. Arrange on a baking sheet, and bake until browned and almost tender, 6-8 minutes, turning once
Place a tomato slice on each eggplant slice, and season with the oregano, basil, and garlic powder. top with cheese and bake until the cheese melts, 3-5 minutes.

I like to use plain bagels, split, then add sauce, pepperoni and cheese (or more!), then pop in the oven for a few minutes to broil. Yum:)
